Happy Anniversary Chicken Soup

So this weekend marked four years of dating, and three years of living in sin (boum chicka wow wow) for my fiancĂ© and me.  But of course I was still sick, which was sooooo romantic.  For the actual evening we ordered pizza from our favorite place and watched movies together on the couch until I fell sleep with my head on his lap.  The next day a few of our friends asked what we did and were appalled by the fact that we didn't go out and celebrate our love or whatever, but now that I really think about the night....it was perfect.  We spent the whole day together with little interruption.  We ran errands together, went out and bought me presents (always a favorite hobby) and visited some family.

For the last four years our life together hasn't been all celebrations.  Between my stepmother's terrorizing ways when we first started dating, a really awkward "so-you're-sleeping-with-my-daughter" impromptu dinner with my father, my father's passing away, and his mother's abrupt decision to hate my existence suddenly after a year of being together.....it hasn't been all champagne and roses (though there have been some lovely roses)  In all of this we have found strength and comfort in just being with each other.  This has kind of been a theme of our relationship.  Because of this, I can't really think of a better way to celebrate our anniversary....and I didn't have to put on heels...so bonus.





Anywho....here's the lovely chicken soup I made the night before.  I like mine with noodles but Patrick doesn't so i made the noodles separate.  I cheated and bought organic chicken stock because I was sick and didn't want to deal with making my own stock.  However, I did buy bone-in, skin-on organic chicken breasts and boiled them in two parts stock, one part seasoned water.  Close enough right?

After the chicken breasts are cooked remove and allow to cool in a separate bowl.  Add veggies.  I just like carrots in mine, but I'm sure shallots, celery, and any number of other yummy things will be wonderful in this.  Its your soup, use your imagination!

While the carrots are boiling away remove the bones, skin, and other non-edibles from the chicken breasts.  Hand shred the meat and place in the bowl. Once the carrots are soft and have given up much of their yummy carroty goodness add the chicken into the soup.  Stir and serve!
